Breadsticks with Marinated Anchovies in Seafood
1 package of Roberto Wholemeal Grissini
200 g of sun-dried tomatoes in oil
200 g of fried anchovies
100 g of pickled gherkins
20 g of parsley
1 garlic clove
Extra virgin olive oil to taste
Salt to taste
Pepper to taste
White wine vinegar to taste
Start with the marinade: Place the parsley, garlic clove and extra virgin olive oil in a blender and chop together for a few seconds.
Squeeze the lemons and collect the juice in a bowl, add oil and season with salt and pepper. Using a hand whisk or fork, mix the ingredients in the bowl well and add the chopped parsley and garlic a little at a time. Continue stirring until the mixture is smooth.
Remove the bones from the anchovies, rinse the fillets, place them in an ovenproof dish and pour over the marinade you prepared earlier. Let the anchovies rest for at least 5 hours at room temperature.
When the anchovies are well marinated, add the white vinegar, mix and then drain the fillets from the marinade. Arrange the marinated anchovies on a serving plate and serve with sun-dried tomatoes, gherkins and Roberto’s Whole Grain Breadsticks.
